Okay, so I have a good one this morning. This is a hind quarter of beef here. You can see the hind leg, the hawk comes down. Here’s the tail head, and then all the way down to about mid-spine is where we cut them. But this is my first time catching this on this beef. I found this right here. So here’s the pelvis, and then come down.=

Any idea what this is? This is a testicle. This is actually what we call a high flanker in cattle. So that’s where a testicle shoots really, really high. Traditionally, the testicles would probably be down in this area hanging, but this is one that got shut up and stayed high. So this was technically still probably a bull. I don’t know how active. It was probably too hot in the body cavity for this animal to actually stay a bull.

But I’ve never found one on any of my carcasses. The guys must have missed it on the kill floor. So I thought that was kind of fun to share. Kind of a shriveled-up little testicle. But yeah, there you go.
